Valentine's day is all about sweetness, from flowers and candies to love notes and romantic gestures. Dinners and delectable desserts make it difficult to stay on track with healthy eating. This year, wow your loved one with a homemade treat that's sweet, delectable and delicious and made with the most important vitamin of all... Vitamin L, for Love.
- 1/2 cup pistachios hulled
- 1/2 cup unsweetened shredded coconut
- 1/4 cup cocoa powder
- 1/4 - 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 14 Medjool dates pitted
- cocoa powder for topping
- shredded coconut for topping
Soak the dates in warm water for about 10 minutes. Drain.
In your food processor, combine pistachios, shredded coconut, cocoa powder, and salt. Pulse until finely ground.
Add in vanilla and the softened Medjool dates and pulse until a ball forms.
Roll into bite sized balls (mine were about 1/2 tablespoons) and dip immediately in to cocoa powder or shredded coconut.
Enjoy immediately! Store the leftovers in an airtight container in the fridge.
